Ingredients:
- 8 oz. gluten-free penne pasta (or wheat pasta)
- 2 tbl. olive oil
- 1/2 cup chopped onion
- 2 cloves garlic
- 12 oz. New Frontiers Sweet Italian Sausage
- 1 cup canned diced tomatoes
- 1/4 cup cream
- 6 cups arugula or baby spinach
- 1/2 cup shredded parmesan
Cook pasta in boiling salted water till al dente. Drain but do not rinse. Heat oil in large skillet and add turkey sausage and smash down with a fork to crumble as it cooks.(if it’s not crumbling add a little water to the pan) Half way through cooking add the chopped onion and minced garlic and continue cooking until the meat is browned. Add diced tomatoes and simmer for 5 minutes. Lower the heat and add the cream. Stir to blend. Add the cooked pasta. Mix well and simmer for 1 to 2 minutes stirring continuously. Remove from heat and add arugula. Toss and transfer pasta to serving bowl. Sprinkle with Parmesan cheese. Serves 4 to 6.
