Cumin-Spiced Peppery Sirloin Kabobs

Ingredients:

  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon cayenne
  • 1 teaspoon sea salt
  • 2 pounds sirloin steak or roast, cut into 1-inch pieces
  • Bamboo skewers, soaked in water for 30 minutes

Stir together oil, garlic, and spices in a bowl. Add beef, mix to coat beef with spice mixture, cover tightly and chill for 2-8 hours. Prepare gas or charcoal grill for cooking over medium-hot heat. Thread about 4 pieces of beef onto each skewer, leaving small spaces between pieces. Lightly oil grill rack. Place skewers on grill (cover if using gas grill) and cook approximately 4-6 minutes, turning once, until beef is browned but still pink inside. (Can also be prepared in a broiler.) Serve with steamed rice and sautéed vegetables for a complete meal. Serves 6.
