Ingredients:
- 3 Tbl. olive oil
- 2 cloves garlic, minced
- 1 14.5-oz. can diced tomatoes with basil and garlic,
or 4 fresh tomatoes, seeded and diced - 6 oz. angel hair pasta
- 1/2 cup grated Parmesan cheese
- 2 Tbl. fresh basil, sliced in thin ribbons
- Additional Parmesan for topping
In a large saute pan, saute garlic in olive oil over low heat for 1 minute; add tomatoes with juice and simmer for 3 minutes. Cook angel hair in large pot of boiling salted water, according to package directions, until just tender to the bite. Drain. Add hot pasta to tomatoes in pan and stir to coat pasta. Add cheese and basil – toss well. Serve with additional Parmesan if desired, and crusty whole wheat bread. Serves four.
