Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon honey, or 2 tablespoons agave nectar
- 1 tablespoon apple cider vinegar
- 1 teaspoon lemon juice
- Pinch salt and freshly ground black pepper
- 4 cups torn leafy lettuce or baby lettuce
- 1 avocado – peeled, pitted and diced
- 1 pint strawberries, sliced
- 2 oz. Chevre goat cheese, crumbled
- 1/2 cup chopped toasted pecans
In a small bowl, whisk together the olive oil, honey, vinegar, lemon juice, salt and pepper. Set aside. Place the lettuce in a salad bowl, and top with avocado, strawberries and goat cheese. Drizzle dressing over salad; sprinkle with pecans. Cover and chill for up to 2 hours, or serve immediately. Serves 4.
