Baked Orange Chicken with Sauteed Spinach recipe


  • 4 boneless, skinless chicken breast halves
  • 2 tablespoons soy sauce
  • 1/4 cup orange juice
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 2 6-oz. bags washed baby spinach
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced

Spray an 13×9-inch baking pan with nonstick cooking spray. Combine soy sauce, orange juice, olive oil and maple syrup. Pour over chicken in baking pan. Cover tightly and marinate for several hours or overnight.  Preheat oven to 400°F. Place chicken in preheated oven and immediately turn down the heat to 350°F. Bake for 25–30 minutes, basting occasionally. Serve with steamed rice.  While chicken is baking, prepare spinach.  Heat oil and butter in large saute pan; add garlic and saute over medium heat until softened, about 3 minutes. Add spinach and saute until just wilted, about two minutes. Serves 4.
