Country Coleslaw


  • 1 head green cabbage, shredded
  • 1/4 head red cabbage, shredded
  • 2 medium carrots, peeled and shredded
  • 1/2 mayonnaise or Vegenaise
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar, xylitol or agave syrup
  • 1/4 teaspoon salt

Place all ingredients in large mixing bowl and mix well. Cabbage volume will decrease significantly while mixing. Mix to evenly and thoroughly distribute dressing. Transfer to serving bowl. Enjoy! Serves 6.

For some fun and tasty alterations, try adding, or substituting for some of the cabbage:

  • Sunflower or pumpkin seeds
  • Finely shredded broccoli
  • Napa cabbage
  • Finely shredded kale or other greens
  • Shredded beets (will turn salad a lovely pink)
