Double Chocolate Pudding

Ingredients:

  • 4 cups cubed sliced bread, such as Rudi’s Organic Bakery Country White Bread (about 7 ounces)
  • 1-1/2 cups semi-sweet chocolate chips
  • 2 cups half and half, divided
  • 1/3 cup cocoa powder
  • 4 large eggs
  • 1 large egg yolk
  • 1/2 cup sugar
  • 1 cup whipping cream, whipped with 1/4 cup sugar and 1/2 tsp. vanilla extract

Place bread cubes and 3/4 cup chocolate chips in a large bowl; mix to blend. Whisk 1 cup half and half and cocoa powder in medium saucepan. Place over low heat and add remaining 3/4 cup chocolate chips. Stir until chocolate chips are melted and mixture is smooth. Add remaining 1 cup half and half and whisk to blend. Whisk eggs, egg yolk and sugar in medium bowl. Whisk in chocolate mixture until well blended. Pour over bread cubes, stirring gently to blend. Let sit for one hour for bread to absorb custard, stirring occasionally. Pour into buttered 8×8-inch baking pan. Bake at 350°F until pudding is set in center, about 45-50 minutes. Serve warm with sweetened whipped cream. Serves 6.
