Marinated Pork Tenderloin

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1 tablespoon red wine vinegar
  • 1/2 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 (3/4 pound) pork tenderloins,
  • or 11/2 lb. pork loin roast

Place soy sauce, brown sugar, vinegar, onion, olive oil, and garlic powder in a glass casserole, bowl or large zip top plastic bag. Stir to mix. Place pork in bag with marinade, seal, and refrigerate for 6 to 12 hours, or up to 2 days. Preheat grill for high heat. Lightly oil grill grate and place tenderloins on grill, reserving marinade. Cook pork 20 minutes, or to desired doneness, turning once. While pork is cooking, place marinade in small saucepan and bring to a simmer; cook several minutes to make a sauce. Slice pork into medallions and serve. Or, bake in 375 degree oven for 45-75 minutes (depending on size of tenderloin), until meat thermometer reads 160 degrees.
