Ingredients:
- 2 small ripe avocados, peeled and sliced
- 1 large orange, peeled, white pith, membranes and
- seeds removed, diced
- 4 cups baby spinach leaves (about 12 oz.)
- 1/2 small red onion, thinly sliced
- 1/2 cup tamari roasted pumpkin seeds
Dressing:
- 1/4 cup orange juice
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 teaspoon agave nectar or sugar
- salt and ground black pepper to taste
Toss salad ingredients together in a serving bowl. Whisk together the dressing ingredients and pour over salad. Toss to coat and serve. Serves 4.
