Sweet & Spicy Shrimp

Ingredients:

  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons blackening spice
  • 1 lb. Large or Extra Large raw shrimp, peeled and deveined
  • Bamboo skewers

Combine brown sugar, garlic, olive oil, lemon juice and blackening spice in shallow glass pan or bowl. Add shrimp and stir to coat well. Cover and marinate for 30-60 minutes, stirring occasionally. Meanwhile, soak skewers in warm water. Thread shrimp through tail and head onto one end of bamboo skewers (2 per skewer). Grill or broil over high heat for 2 minutes per side. Arrange skewers on a serving dish. If desired, serve with dipping sauce. Makes 10-12 appetizer servings or 4-6 entree servings.

Spicy Sweet Dipping Sauce:

  • 1 cup mayonnaise
  • 1/2 cup barbecue sauce
  • 1/3 cup ketchup
  • Tabasco sauce to taste

Stir all ingredients to combine.
