Ingredients:
- 1/4 cup extra-virgin olive oil
- 1 medium onion, diced
- 4 cloves garlic, chopped
- 1 red bell pepper, chopped-diced
- 1 red or green pepper, cored, seeded and diced
- 1 carrot, peeled and shredded
- 1-1/4 pounds ground turkey, preferably Diestel
- Salt and pepper to taste
- San-J Polynesian Sweet & Tangy Sauce
- Annie Chun’s Korean Sweet & Spicy Sauce
- Soy sauce
- Red pepper flakes
Heat olive oil in large saute pan, add onions, garlic, peppers and carrots and cook over medium heat until onions are translucent and peppers soften, about 5 minutes. Add 1/8 tsp. each salt and pepper, ground turkey and two teaspoons San-J Polynesian Sweet & Tangy sauce. Use wooden spoon to break apart the turkey, and continue cooking until turkey is browned. Add 1-1/2 tbl. Annie Chun’s Korean Sweet & Spicy sauce and 1 teaspoon soy sauce.
Heat until vegetables are soft and turkey is cooked. Add salt, pepper and red pepper flakes to taste. Let cool for 5-10 minutes. Serve “taco style” in fresh lettuce leaves, with additional sauce if desired. Serves 4-6.
