Ingredients:
- 2 tsp. olive oil
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 2 tsp. olive oil
- 2 lbs. ground turkey
- 3 cups chicken broth
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. blackening spice or Cajun spice
- 1 12-oz. can green enchilada sauce
- 1 cup hominy
- 1/4 cup cornmeal mixed with 1/4 cup cold water
Saute onion and garlic in olive oil in large saucepan until onion is soft. Add ground turkey and cook, stirring occasionally, until turkey is no longer pink. Drain well. Add broth, cumin, paprika, blackening spice, enchilada sauce and hominy to turkey mixture in pan. Bring to a simmer and cook, covered loosely, for 30 minutes. Add cornmeal water mixture while stirring constantly. Simmer an additional 15-20 minutes, until chili is thickened slightly. Serve with New Frontiers Tortilla Chips and grated cheddar cheese.
