Sauteed Zucchini with Garlic and Lime

Ingredients:

  • 1 teaspoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium shallot, minced
  • 1 lb. zucchini
  • 1/2 fresh lime
  • salt and pepper to taste

Cut ends off zucchini and slice on the diagonal into 1/4-inch slices. Melt butter with olive oil in a large skillet over medium heat. Stir in garlic and shallots, and cook for 1 to 2 minutes. Add zucchini and cook, stirring occasionally, until tender, about 5 minutes. Squeeze lime over zucchini in pan, and season with salt and pepper. Cook 20 seconds longer. Transfer to serving plate, and garnish with lime wedges.

Serves 4.
