Beets are nutritional powerhouses, high in folate, manganese and potassium. Roasting beets is the best way to bring out their sweet, uniquely earthy flavor, and makes their peels easy to slip off.
Preheat the oven to 375.
Take 2 bunches of beets, cut off the greens, wash them, and set aside. Beet greens are rich in beta-carotene, vitamin C, iron and calcium. Scrub the beets clean and place them on a large piece of aluminum foil. Bring the foil together to form a tightly sealed packet, place in oven and roast for 45-60 minutes, depending on the size of the beets. They are done when the tip of a knife easily slides into them. Remove from oven and cool. Cut off the tops, slip off the skins, and slice the beets. Delicious served with sautéed beet greens, goat cheese, candied pecans, heirloom tomatoes and balsamic vinegar
