Ingredients:
- 1-1/2 pounds apples, peeled and cored and chopped
- 1-1/2 pounds pears, peeled and cored and chopped
- 1/2 cup apple juice
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Combine apples, pears and juice in a very large heavy-bottomed stainless steel saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and boil gently for 20 minutes. Stir in sugar, cinnamon and lemon juice. Return to a boil, reduce heat to low, and simmer for about 30-40 minutes longer, or until fruit mixture is very thick, stirring often to prevent scorching. Remove from heat and cool. Spoon into jars and refrigerate, or freeze in freezer-safe containers.
