Halibut Mango Tacos

Ingredients:

  • 1 lb. halibut fillet (select thicker cut for easy grilling)
  • 3 limes: 1 juiced and 2 sliced into wedges for topping
  • 1 tsp. chili powder
  • 1/2 tsp. crushed red chilies
  • 1 tsp. sea salt
  • 2 tablespoons plus 1/4 cup chopped cilantro leaves
  • 12 corn tortillas

Toppings:

  • 1 large ripe mango, peeled and diced
  • 3 cups finely shredded green cabbage
  • 3 green onions, chopped
  • 1 large tomato, seeded and chopped
  • 2 large ripe but firm avocados, pitted and diced
  • 4 oz. sour cream and/or 4 oz. Mexican crema
  • 8 oz. your favorite salsa or hot sauce

Mix together the lime juice, chili powder, crushed red chilies, salt and 2 tbl. cilantro. Pour over the halibut in a small baking dish and place in fridge for 30 minutes, turning for even marinating. Arrange toppings on serving platter. Heat the grill to medium high and brush lightly with oil or spray. Grill fish for 3 to 4 minutes per side. Transfer to serving dish and cut into chunks. (Fish can also be sauteed.) Warm the corn tortillas wrapped in foil on the grill or wrapped in paper towel in microwave. Place all the taco components on the dinner table and build your own tacos. Serves 4.
