Curried Chicken

Honey Glazed Curry Chicken

  • 6 chicken thighs and/or drumsticks
  • 3 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons prepared mustard
  • 1 tablespoon mild curry paste (such as Patak’s)
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 6 chicken thighs and/or drumsticks

Preheat oven to 350 degrees.  Combine all ingredients except chicken in a large mixing bowl.  Spray a shallow baking pan with nonstick cooking spray and place chicken, skin side up, in pan. Pour honey mixture over chicken, rubbing some under skin.  Place in preheated oven and bake for 1 hour, basting with pan drippings every 15 minutes, until skin is browned and juices run clear when meat is pierced with a sharp knife.  For a complete meal, serve with a crisp green salad, steamed green beans, and brown rice. Serves 4-6.
