- 1/2 cup white miso
- 1/4 cup mirin
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon water
- 1 tsp. peeled and grated fresh ginger
- 4 halibut fillets, (about 6 oz. each)
In a shallow glass baking dish, whisk together the miso, mirin, soy sauce, sugar, water and ginger until smooth. Add the halibut and turn to coat evenly. Cover and refrigerate for at least 2 hours or up to overnight. Preheat oven to 400 degrees. Remove the halibut from the marinade and place the fillets in a shallow, lightly oiled baking pan. Place in oven and bake until cooked through, about 10-12 minutes. If desired, bake fish 8 minutes, then broil 3 inches from the heat source until browned with crusty edges, about 4 minutes. Serves 4.
