Ingredients:
- 1 1/3 lbs. lean ground beef
- 1/2 cup fi nely chopped onion
- 1/2 tsp. each sea salt and ground black pepper
- 1/4 cup Worcestershire sauce
- 1-1/4 cups shredded Parmesan cheese
- 2 Tbl. chopped parsley
- 4 each whole grain hamburger buns (Rudi’s or Ezekiel)
- 1 Tbl. olive oil
- Aioli
- 3/4 cup mayonnaise
- 3 cloves garlic, minced or pressed
- 2 Tbl. Dijon mustard
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
Mix the ground beef with the onion, salt, pepper, Worcestershire sauce, Parmesan cheese and parsley. Allow to rest in fridge for 30 min. Make the Aioli: Combine all the sauce ingredients; set aside. Prepare grill. Form ground beef mixture into 4-6 patties. Place on grill and cook for about 4 minutes on each side for medium rare (can be cooked in skillet also). Cut the buns in half and lightly brush with olive oil. Lightly toast buns on grill. When meat is ready place one burger on each bun. Serve with sliced tomato, red onion and fresh arugula. Serves 4-6.
