Ingredients:
- 1 lb. ground turkey or lean ground beef
- 1 egg
- 1/2 cup bread crumbs
- 1/4 cup milk
- 3 green onions, sliced
- 1/2 cup water chestnuts, chopped
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon ground ginger
- 1 teaspoon soy sauce
- 2 tablespoons olive oil
- 1/2 cup chicken broth or water
Combine ground meat and next 8 ingredients in a bowl; mix to combine. Form into 1-inch balls. Heat olive oil in a saute pan over medium heat. Add meatballs and cook until browned, about 10 minutes, stirring to brown evenly. Add chicken broth and cook until broth has evaporated. Set aside and keep warm. For sauce: Combine 1/2 cup packed brown sugar, 1/3 cup cider vinegar, 1 tablespoon cornstarch, and 1 tablespoon soy sauce in a medium saucepan. Cook over medium heat, stirring, until sauce simmers and thickens. Add 1 15-oz. can pineapple chunks. Pour sauce over meatballs and simmer until heated through. Serve over brown or white rice. Serves 4-6.
