Ingredients:
- 2 cups unbleached or whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 cup sugar
- 2 eggs + 2 egg whites
- 1 cup plain nonfat yogurt
- 1 cup skim milk
- 1 cup quick cooking oats
- 1 apple, cored and grated
- 1 tbl. vegetable oil
Whisk together flour, baking powder, baking soda, and sugar in a mixing bowl. In another bowl, beat eggs and egg whites. Add yogurt, milk, oats, apple and oil. Let sit for 10 minutes. Add flour mixture to yogurt mixture and mix with a fork until blended. Drop batter by large spoonfuls onto a medium hot, lightly oiled griddle or skillet; cook until edges are dry, turn and cook until browned. Serve topped with maple syrup, fruit syrup, or jam. Serves 6.
